I hope that these simple and quick vegan recipes help bring out the chef in you and inspire you to create even more dishes.

Our recipes have two breakfast items that are quick and easy. Then find two snacks that are not just delicious but healthy too! Vegan food never has to be boring or tasteless. I am a foodie and I never compromise with taste. Let’s get cooking, shall we?

Vegan Oatmeal Bowl

Fuel your body with this simple oatmeal bowl – a perfect start to your day.

Prep time: 5 mins   

Cook time: 7-8 mins   

Difficulty Level: Super Easy  

Serves: 1

Ingredients

  • â…“ cup Oats
  • 1 cup Plant-based Milk
  • Sugar (as per taste)
  • Fresh, seasonal fruits
  • Nut Butter (Chocolate or Peanut butter )

Instructions

  1. Heat the plant based-milk in a pan and add oats.
  2. Cook the oats until they are soft. Add sugar and stir.
  3. Once all ingredients are cooked, pour it into a bowl.
  4. Top it with nut butter and some fresh fruits of your choice. That’s all! 

Note: You can add half a banana or dates while cooking the oats to naturally sweeten it.

Vegan Pancakes

You don’t have to compromise on eating those beloved pancakes if you turned vegan.

Prep time: 10 mins   

Cook time: 10 mins   

Difficulty Level: Easy  

Serves: 2

Ingredients

  • 2 ripe Bananas
  • 1 cup Plant-based Milk
  • 1 cup Oats
  • ½ tsp Baking Powder
  • Toppings of your choice 🙂

Instructions

  1. Mash the bananas in a bowl. Blend it if necessary.
  2. Add oats and a cup of plant-based milk. Mix well.
  3. Add coconut oil onto the heated pan and pour the batter.
  4. Wait until the edges turn slightly brown.
  5. Flip it carefully and let it cook for 2 more minutes.
  6. Once cooked, your pancake is ready for some toppings.
  7. Add fruits, peanut butter or chocolate spread and dig in.

Note: You can also add cocoa powder to make it chocolatey.

Apple Peanut Butter Snack

Apple is full of vitamins and Peanut butter is packed with protein. So don’t shy away from eating this snack post workout.

Prep time: 5 mins   

Cook time: 2 mins   

Difficulty Level: Super Easy  

Serves: 1

Ingredients

  • 1 Apple
  • 1 tbsp Peanut Butter (but you can add more if you like :P)
  • Few Pistachios for garnish (Optional)

Instructions

  1. Slice up your apple.
  2. Dip it in peanut butter.
  3. Garnish with Pistachios. All set!
roasted makhana- Indian vegan snack

Roasted Makhana

Us Indians have the habit of nibbling something. We are always on the loot for something good to eat. So instead of snacking on junk, why not find a healthy and tasty alternative?

Makhana or foxnuts is a superfood rich in proteins and fibre and low in fat. If that wasn’t enough, they also contain magnesium, potassium and phosphorus. A power pack food item indeed!

Prep time: 2 mins   

Cook time: 6 mins   

Difficulty Level: Easy  

Serves: 2

Ingredients

  • 50g Makhana (Fox Nuts/Lotus Seeds)
  • 1 tsp Black Pepper
  • Salt to taste 
  • 2 tsp Olive Oil
  • ¼ tsp Red Chilli Powder

Instructions

  1. Heat some oil in a heavy-bottomed pan.
  2. Add the Makhana
  3. Roast for about 5 minutes until they turn slightly brown and crispy.
  4. Turn off the heat
  5. Let it cool down for a minute or two.
  6. Once makhanas are at room temperature, add the spices.

Note: While roasting,keep stirring the Makhana to avoid any burning. 

You can modify this also by adding curry Leaves and peanuts for extra zing.
